Four Days Fermentation & Flavours in the Ardennes
From Thursday 9 to Sunday 12 April 2026, Christian Weij will host an inspiring four-day training course in the Ardennes focused on fermentation, depth of flavour and artisanal craftsmanship.
In the green surroundings of holiday park Domaine Le Boulac, participants will work on advanced fermentations such as sourdough croissants, soy sauce, miso, tempeh and Worcestershire sauce.
Hot sauce, ketchup, chutney and powdered broth will also be covered, with particular attention to balance, complexity and umami.
The training is given in Dutch. Registration takes place via the website of Christian Weij.
